Snacking it Up – Vegetarian Nachos and Caramelized Onion and Shallot Dip

I wanted to make a couple of snacks this weekend. it’s a busy sports time of year with the baseball season going, football season just starting, college football underway, NASCAR entering the chase and more, so there are plenty of good things for you ro watch. If you have some friends over for the game and want to make a couple of quick and easy snacks, these two are perfect to give a try. The first is a very easy vegetarian nachos recipe that you can whip up in just a few minutes.

Vegetarian Nachos

1 bag tortilla chips

1 15-ounce can black beans, rinsed

1 large onion, chopped

2 cups shredded cheese (such as cheddar or Monterey Jack)

1 bunch fresh cilantro leaves

Jalapeno peppers, sliced

Salsa, for topping

Guacamole, for topping

1 cup sour cream, for topping

Preheat the oven to 350 degrees. Coat a large baking sheet or a large pie plate with nonstick spray. In a saucepan over medium, add 1 tablespoon of vegetable oil and the black beans and chopped onion. Saute until the beans are warmed through and the onion is soft, about 2 minutes. Place a layer of tortilla chips on the sheet and cover with a layer of beans and onions and then cover with cheese. Repeat the process to make a second layer. Bake in the oven until the cheese is melted, about 20 minutes. Top with salsa, guacamole, cilantro and sour cream.

You could make these nachos with some beef or pork if you happen to have some on hand and ready to use, but you can just as easily throw it together without them and then they are suitable for anyone who is staying away from meat to eat. You could always vary the toppings and add more or less of what you and your guests like best to make a great snack.

It’s always good to have a good dip on hand and what is better and more liked than an onion dip? Naturally, you could simply used the dry soup mix that many people use with some sour cream or yogurt, but using fresh ingredients tastes so much better and has a lot less sodium and preservatives. This one is really easy to make and you can alter it up a little bit to make it even easier. I altered the original recipe somewhat from Bon Appetit to make a little bit of a smaller batch.

Caramelized Onion and Shallot Dip

1 pound large onions, thinly sliced

2 large shallots, thinly sliced

2 sprigs of thyme

2 tablespoons olive oil

Kosher salt and freshly ground pepper

1/2 cup dry white wine

1 tablespoon Sherry vinegar

1 cup sour cream

1/4 cup plain Greek yogurt

1 teaspoon onion powder

In a large skillet over medium-high heat, heat the olive oil until shimmering. Add the onions and shallots and saute until soft, about 8 minutes. Season with salt and pepper. Add the sprigs of thyme, the white wine and the Sherry vinegar and saute until the liquid has evaporated and the onions and shallots are well caramelized, about 6 minutes. Remove the skillet from the heat and discard the thyme sprigs. Allow the mixture to cool.

Transfer the onion mixture to a large bowl. Stir in the sour cream, yogurt and onion powder until the mixture is well blended. Season with salt and pepper to taste. Cover and chill the dip until ready to use.

The original recipe roasts the onions and shallots in the oven for well over an hour. If you have the time to put in and want to do it that way and get a deeper, richer flavor from the onions then you may want to give it a try. If you are pressed for time and want something faster but still tastes better than anything you can buy, give it a try with my method. Everyone thought the results were pretty good from what I made.

Snacks Ahoy! Butter Toffee Popcorn and Lemon Yogurt Cake

Yesterday I decided to make a couple of new snack and dessert items that I had downloaded recipes for a while back. Sean had picked out the first one as something he wanted to try, which is Butter Toffee Popcorn. he helped me make it and there is not much too this recipe as far as ingredients or effort, but the final result is a great snack. I got the recipe from Cook’s Country, one of my favorite sources for recipes.

Butter Toffee Popcorn

3 quarts popped popcorn

10 tablespoons (1 1/4 sticks) butter

1 1/2 cups packed light brown sugar

1/2 cup dark corn syrup

1/2 teaspoon salt

1 1/2 teaspoons vanilla extract

1/2 teaspoon baking soda

2 cups salted peanuts

Adjust an oven rack to the middle position and heat the oven to 250 degrees. Grease a large roasting pan and place the popcorn in the pan.

Melt the butter in a large saucepan over medium-high heat. Add the brown sugar, corn syrup and salt and bring the mixture to a boil. Reduce the heat to medium-low and simmer, stirring occasionally, until slightly thickened, about 3 minutes. Off the heat, stir in the vanilla and the baking soda (the mixture will foam a little). Add the peanuts and pour the mixture over the popcorn, tossing well to coat.

Bake, stirring occasionally, until the popcorn is a deep golden brown and the caramel has set, about 1 to 1 1/2 hours. Cool to room temperature and serve. The popcorn can be stored in an airtight container at room temperature for 5 days.

This is certainly the easy way to make your own version of Cracker Jacks and save you some cash. You want to be sure to just use plain popcorn, not popcorn that is already seasoned with anything so you don’t get any additional flavors that might affect the caramel (unless that is what you want of course). Also, I used a disposable aluminum roasting pan when I did this to save myself the aggravation of having to try to wash a roasting pan with baked caramel stuck to it. Overall, it’s a pretty tasty snack that is very easy to make. I love toffee myself, so this worked out very well for all of us.

The second recipe I tried was one from Ina Garten, the Barefoot Contessa of the Food Network. It is for a simple Lemon Yogurt Cake that makes for a great item for a brunch, to bring to a party or housewarming, or just to have in the morning with coffee or for dessert.

Lemon Yogurt Cake

1 1/2 cups all-purpose flour

2 teaspoons baking powder

1/2 teaspoon kosher salt

1 cup plain whole-milk yogurt

1 1/3 cups sugar, divided

3 eggs

2 teaspoons grated lemon zest (about 2 lemons)

1/2 teaspoon vanilla extract

1/2 cup vegetable oil

1/3 cup freshly squeezed lemon juice

For the glaze:

1 cup confectioners’ sugar

2 tablespoons freshly squeezed lemon juice

Preheat the oven to 350 degrees. Grease a loaf pan and line the bottom with parchment paper.

Sift together the flour, baking powder and salt into 1 bowl. in another bowl, whisk together the yogurt, 1 cup of sugar, the eggs, lemon zest and vanilla. Slowly whisk the dry ingredients into the wet ingredients. With a rubber spatula, fold the vegetable oil into the batter, making sure that it all gets well incorporated. Pour the batter into the prepared loaf pan and bake for about 50 minutes, or until a toothpick inserted into the center of the cake comes out clean.

Meanwhile, cook the 1.3 cup of lemon juice and the remaining 1/3 cup of sugar in a small pan until the sugar dissolves and the mixture is clear. Set aside.

When the cake is done, allow it to cool in the pan for 10 minutes. Carefully place the cake on a cooling rack over a sheet pan. While the cake is still warm, pour the lemon-sugar mixture over the cake and allow it to soak in. Cool.

For the glaze, combine the confectioners’ sugar and the lemon juice and pour over the cake before serving.

I did opt to omit the second glaze even though I am sure it looks great and tastes great too. I just thought it was too much sugar overkill for the cake and I liked the way it looked with just the first lemon-sugar mixture on it. It has just the right amount of sweetness and lemon flavor. It’s a great cake to make without needing a lot of time or ingredients if you want something at the last minute.

Super Simple Stromboli for Sunday

With the big game coming on Sunday, many people are having different types of parties. I have posted different snacks that are good for football parties in previous posts, but this is something I just made this week for dinner but would also be great not just for football parties, but for any party. The basis of the recipe is from Scott Conant of Scarpetta restaurants and Food Network’s Chopped. I found this stromboli recipe on Food Network’s site and altered it a bit to fit what I had on hand. In his recipe, he makes the pizza dough himself. I don’t have the time or space to make dough, so I used store-bought pizza dough and I think it turned out fine, so do what you like best. You could use any pizza dough recipe you have I think and get good results.

Stromboli

1 pound store-bought or homemade pizza dough

2 cups mozzarella cheese

1/2 bunch fresh basil, chopped

1 teaspoon garlic powder

Freshly ground black pepper

4 meatballs, pre-cooked and sliced

2 Italian sausage links, cooked through and sliced

1 small onion, sliced and sautéed until soft

Extra-virgin olive oil

Salt

1/4 pint cherry tomatoes, halved

Tomato sauce, warmed, for dipping

Preheat the oven to 375 degrees. Remove the dough from the refrigerator and allow it to come to room temperature. Lightly brush a baking sheet with olive oil. Lightly flour your countertop and the pizza dough and roll the dough to a rectangle.

Place half the cheese, the basil, garlic powder, pepper, meatballs, sausage and onion in the middle of the surface of the dough. Fill two-thirds of the surface, leaving the bottom third and a little of the sides empty. Top with the remaining cheese and salt to taste. Roll the sides of the dough over the filling and then seal the ends and edges with your palms to make a loaf. Transfer to the oiled tray. Rub a little olive oil over the top of the dough. Place the tomatoes, salt and pepper on the top. Cover the tray with plastic and let it sit for 15 minutes to rest.

Place the tray in the oven and bake for a total of 45 minutes. After 20 minutes, turn the pan 180 degrees. Bake another 20 minutes, then turn the pan again and bake the remaining 5 minutes. Remove from the oven and transfer to a cutting board to allow the loaf to cool. Slice and serve with tomato sauce on the side for dipping.

There are dozens of different ways you can go with this recipe. You can fill the stromboli with anything you like really. You can use different meats, vegetables or cheeses depending on what is to your liking. I saw many recipes that use salami, provolone, eggplant, peppers and more, so use whatever you like best.

It can make a nice dinner with a simple salad or will be great for any party that you may have. It is even better as something to bring to party you are going to.
