Anytime is Burger Time! Turkey Burgers with Caramelized Pineapple

I love a good hamburger (and probably even a bad one). Burgers make a quick and easy meal, taste great and we always seem to think about them more in the summertime because it is the perfect time to grill. I like to cook burgers all year-long and since I don’t have an outdoor grill to use I make use of my trusty cast iron skillet, nonstick skillet or cast iron grill pan to get the job done for me. Having the same old traditional hamburger can get a little boring at times so I do like to vary things up now and then. That is why when I saw this recipe from the Tasting Table I knew I wanted to give it a try. The original recipe calls for using ground chicken, but I find ground chicken to be pretty bland. Ground turkey may not sound that much better to some people, but I use it a lot more because it seems to hold up better and takes on other flavors really well so I decided to substitute that into this recipe. Besides, I had just gotten some ground turkey on sale at the grocery store so this was the perfect way to use it.

Turkey Burgers with Caramelized Pineapple

For the Turkey Patties:

1¼ pounds ground turkey

¼ cup crème fraîche or sour cream

1 tablespoon chopped parsley

2 teaspoons chopped chervil

2 teaspoons kosher salt

2 eggs

1 shallot, minced

Freshly ground pepper, to taste

For the Caramelized Pineapple:

2 cups (12 ounces) finely chopped pineapple

1 cup white wine vinegar

2½ tablespoons honey

½ yellow onion, minced

1 cup water

Kosher salt and freshly ground pepper, to taste

For Assembly:

2 tablespoons olive oil

4 hamburger rolls, toasted

Arugula, for garnish

To make the turkey patties: In a medium bowl, add all the turkey patty ingredients and mix them together until they are incorporated completely. With your hands, form 4 equal-sized patties from the mixture and place the patties on a plate; cover the plate with plastic wrap then chill the patties in the refrigerator for 1 hour. This will help them to firm up and hold together nicely during cooking.

Meanwhile, make the caramelized pineapple: In a large skillet set over medium heat, combine the pineapple, white wine vinegar, honey and onion. Bring the mixture to a simmer and cook until the vinegar has completely evaporated, about 20 to 25 minutes.

Once the pineapple begins to caramelize, stir in the water. Simmer the mixture until the pineapple thickens to form a compote, another 6 to 8 minutes. Season the pineapple with salt and pepper to taste.

Cook the burgers: In another large skillet, heat the olive oil over medium-high heat. Add the turkey patties and cook, flipping once, until the patties are golden brown and their internal temperature reads 165 degrees on an instant-read thermometer inserted into the center of a patty, about 4 to 5 minutes per side.

5. Assemble the burgers: On each toasted bun bottom, place a  turkey patty, then top each with a spoonful of the caramelized pineapple, a handful of arugula and the other bun half and serve.

This is probably one of the best turkey burger recipes I have tried. The turkey was cooked just right and it was moist and flavorful, something I always worry about with turkey burgers. I think the sour cream really helps to add moisture and flavor to the burger. The pineapple is great as well, though I did find that it took me more than 25 minutes to completely get all of the vinegar evaporated in the initial step. I took me more like 30 to 35 minutes, but it was okay with me. The pineapple came out nicely caramelized and was great on the burger. I could see using that type of pineapple for other dishes, like a pulled pork sandwich or even as a side dish for a pork dinner. Sean added a piece of cheddar cheese to his burger to round things off and really enjoyed it. I even I had enough turkey to make a couple of extra burgers that we could have for lunch the next day since I did not make them too large.

Have a Pre-Holiday Holiday Meal – Holiday Turkey Burgers

Everyone gets into a bit of frenzy as holidays get nearer and you feel like you have a million things to take care of and plan. I know that is the way it is around here right now as we try to get all of the last-minute things done before the Christmas holiday really sets in. That usually does not leave you with a lot of time to make detailed meals in the days leading up to the holiday as you want to try to keep things as easy as possible. Sure, take-out is always an option when you are looking for something, but an easy alternative is to make some burgers of your own. You can have any type you like of course, but since it is the holidays why not try something different and have this holiday turkey burger, which uses ground turkey and turkey sausage together with some other holiday ingredients for a very different type of burger. I got this recipe from Serious Eats and tweaked it a little to make it my own.

Holiday Turkey Burgers

1 sweet potato

1 tablespoon butter

1/3 cup finely chopped yellow onion

1/4 cup finely chopped celery (about 1 small stalk)

2 teaspoons finely chopped fresh sage leaves

1 teaspoon finely chopped fresh thyme leaves

1 teaspoon finely minced garlic

1 pound ground turkey

1/3 pound loose turkey sausage or pork sausage

4 rolls

Cranberry relish, for topping

Turkey gravy, for topping

Fresh spinach. for topping

Fried onions, for topping

Using the tines of a fork, poke holes all over the sweet potato. Place the potato on a plate and microwave it on high until a paring knife can be inserted in the middle of the potato without any resistance, about 9 to 12 minutes, checking and flipping the potato every 3 minutes. Alternatively, place the potato in a 425 degree oven and cook until a paring knife can be inserted in the middle of the potato with no resistance, about 1 hour. Split the potato open and allow it to cool slightly, about 5 to 10 minutes. Using a spoon, scoop out the flesh into a small bowl and discard the potato skin.

Melt the butter in a skillet set over medium heat. When the foaming subsides, add the onion and celery and cook, stirring occasionally, until the vegetables have softened, about 5 to 7 minutes. Stir in the sage, thyme and garlic and cook until the garlic is fragrant, about 30 seconds. Remove the mixture from the skillet and allow it to cool for 5 to 10 minutes.

Place the turkey, sausage, 1/4 cup of the sweet potato flesh and the vegetable mixture in a medium bowl and mix the mixture with your hands until it is well incorporated. Form the mixture into 4 patties and season each patty with salt and pepper to taste.

In the now-empty skillet, heat the skillet over medium-high heat and add 1 tablespoon of butter. When the butter has melted and the foaming has subsided, place the burgers in the skillet and cook the burgers until an instant-read thermometer inserted into the center of the burger registers at least 145 degrees, flipping the burger halfway through the cooking process to cook it on both sides, about 4 to 5 minutes per side.

Using the rolls (you can lightly toast them if you like), top each bottom half of the bun with a burger and then add the condiments you wish, such as cranberry relish, turkey gravy, spinach and fried onions.

You can get the complete flavor of your traditional holiday meal with this burger. The sweet potato adds to the density and taste of the burger and you get a bit of a stuffing flavor thanks to the sage and thyme in the mixture. Add on the gravy, relish, onions and spinach and you have everything to make a holiday meal right on the bun. It is a nice and different alternative to a regular hamburger if you want something a little different for a quick meal.

Gobble Down These Kickin’ Turkey Burgers with Caramelized Onions and Spicy Sweet Mayo

I have been on something of a turkey burger kick lately, wanting to try out different recipes that can bring flavor to a healthier alternative to the regular beef hamburgers. I have tried a few different things, and then I found this recipe at allrecipes.com for a very easy turkey burger that makes use of two things I really like on a burger – caramelized onions and a nice, spicy mayonnaise. The recipe itself can’t get much easier than this and you can make the mayo ahead of time so you have it ready to go when you put the burgers on the table.

Kickin’ Turkey Burgers with Caramelized Onions and Spicy Sweet Mayo

For the Spicy Mayo:

1 cup mayonnaise

1/4 cup coarse-grain mustard

1/4 cup honey

1 tablespoon prepared horseradish

Hot sauce, to taste

1 teaspoon cayenne pepper

For the Turkey Burgers:

1 1/4 pounds ground turkey

1/2 onion, grated

1 jalapeno pepper, seeded and minced

2 tablespoons barbecue sauce

2 tablespoons Worcestershire sauce

1/4 teaspoon liquid smoke

1 tablespoon Montreal Chicken seasoning

1 teaspoon dry mesquite seasoning

For the Caramelized Onions:

1 tablespoon olive oil

1/2 onion, sliced

Hamburger buns, for serving

For the mayonnaise, combine the mayonnaise, coarse-grain mustard, honey, horseradish hot sauce and cayenne pepper in a bowl until it is well blended. Adjust seasoning with the hot sauce to suit your tastes. Cover the mayonnaise and refrigerate it until the burgers are ready.

For the turkey burgers, combine the ground turkey, grated onion, jalapeno pepper, barbecue sauce, Worcestershire sauce, liquid smoke, Montreal Chicken seasoning and the mesquite seasoning together in a large bowl. Form the mixture into 5 or 6 patties.

For the caramelized onions, heat the olive oil in a medium skillet set over medium heat until it is shimmering. Add the sliced onions and cook and stir the onions until the onions have softened and turned translucent, about 5 minutes. Reduce the heat to medium-low and continue cooking and stirring until the onions are very tender and dark brown, about 15 to 20 minutes more.

In a large skillet set over medium heat, add 1 tablespoon of vegetable oil and heat until it is shimmering. Add the turkey patties to the skillet and cook, turning them once, until they reach an internal temperature of 180 degrees when an instant-read thermometer is inserted into the middle of the burger, about 5 to 6 minutes per side. Serve the turkey burgers on the hamburger buns and top each burger with caramelized onions. Pass the spicy mayo around the table for additional topping.

You can always add any of your own favorite toppings to the burgers as well, such as any type of cheese, pickles, tomato, lettuce, bacon or anything that you might like. The spicy mayo turned out really well and added great flavor to the burgers. I have even used it on other sandwiches for topping it tastes great. The burger itself was moist and flavorful and had a really nice smoky taste with a hint of heat from the jalapeno and the mesquite seasoning. Of course, everyone in my house loves caramelized onions and that just made the burger even better for everyone. It’s definitely a great recipe to try when you want to jazz up your turkey burgers. The tropical slaw recipe from yesterday would quite nicely with these as a side dish.

Take a Turn at These Turkey Burgers

Sean had been asking me to make turkey burgers one night for dinner because he really wanted to try them out. I figured it was a great alternative to ground beef and was happy to oblige, but I really needed to figure out how to get some great flavor into the turkey burgers. To me, ground turkey has a tendency to be somewhat flavorless unless you add something to it. I love to use it in chili and meatballs, so I really wanted to find a good combination of spices and vegetables to add to the burgers to make them great. I looked at a lot of recipes and really just ended up taking what I liked best from all of them and putting them together to make my own turkey burgers.

Turkey Burgers

1 1/2 pounds ground turkey

1 shallot, diced

1 egg yolk

2 tablespoons chopped parsley

1 clove garlic, minced

1 tablespoon hot sauce

1 tablespoon McCormick’s Montreal Chicken seasoning

1/4 cup chicken broth

Salt and freshly ground black pepper

Your favorite slices of cheese, optional

Hamburger rolls, for serving

Sliced red onion, for serving

Sliced pickles, for serving

Combine the ground turkey, diced shallot, egg yolk, chopped parsley, minced garlic, hot sauce and Montreal chicken seasoning with clean hands until everything is well blended but not overmixed. Add a little bit of the chicken broth at a time and mix it into the turkey mixture (you can add a little bit more if it seems like it needs more moisture). Shape the turkey mixture into 4 or 5 equally sized patties. Season both sides of the patties with salt and freshly ground black pepper.

Heat 2 tablespoons of vegetable oil in a large skillet set over medium heat until the oil is shimmering. Place the patties into the skillet and cook the turkey burgers until they are golden brown and cooked all the way through, about 5 to 7 minutes per side. If you are using any cheese, place slices of cheese on the burgers and cover the skillet for 1 minute or until the cheese is completely melted. Transfer the burgers to a clean plate and serve, along with the hamburger rolls or buns, sliced red onion, pickles or any other accompaniments that you like with your burgers.

I think everyone was a little skeptical as to how flavorful these burgers would turn out, but I have to say that I thought they were great. The turkey burgers were moist and had great flavor. I think the seasonings and that little bit of chicken broth really helped to make a difference. Of course, the great thing about any type of burger is that you can always add whatever you like best to the mix and get the flavors you want. I think the little bit of heat from the hot sauce  combined well with the shallots and garlic. You could easily add other vegetables to the mix instead, like grated carrot or some spinach and it would be very good.
